Serpil’s lentil soup
A warming, velvety lentil soup with spices and lemony brightness.

Ingredients

1 clove

Wht we love this recipe

We love this lentil soup for its warming, protein-rich comfort. It celebrates Kurdish culinary heritage, uses affordable plant-based ingredients, and supports sustainable everyday cooking at home.

Steps

1.

Wash, peel and chop onions, carrots, potatoes in medium sized cubes and garlic in small cubes.

2.

Heat a pot that holds 7,5l of liquid and add the oil to roast the vegetables. In the end add the garlic.

3.

While the vegetables are roasting, wash the lentils and add them to the pot.

4.

Add the spices to the pot for a moment.

5.

Add the stock, water and the coconut milk and let everything get to a simmer. Let everything cook for approximately 15min.

6.

Blend the soup with an immersion blender and add lemon juice and salt to taste.

7.

Best served with a mint yoghurt topping.
