Grain Risotto
Grain Risotto is a classic and comforting vegan twist on a traditional German grain dish, full of hearty autumn flavours. It’s simple to make and perfect for family meals or cosy seasonal gatherings.

Why we love this recipe

Made with wholesome local grains, this dish is my favourite comfort food — inspired by the flavours of the harvest season. Best of all, it’s incredibly versatile and can be adapted to include any seasonal vegetables you have on hand!

Steps

Step 1

Halve the leeks lengthwise, wash the layers thoroughly, and slice into thin strips.

Step 2

Wash and trim the mushrooms, halve them if necessary, and slice into medium-thick rounds.

Step 3

Sauté the vegetables in a pot until lightly browned.

Step 4

Wash the grains, add them to the pot, and deglaze with soy sauce.

Step 5

Add the vegetable broth, bay leaf, and peppercorns. Cover and simmer over medium heat for 20-25 minutes, stirring occasionally.

Step 6

Stir in the thyme just before the end of the cooking time and season to taste.
